BBQ Chicken Sandwiches from @thesaltycooker are a perfect summer treat. We must confess that we like them any time of year! Here is the recipe that she shared with her followers. The pineapple juice adds a nice zing and the side of tots is magic. Make sure to give her a follow too!
- Preheat the oven to 425 degrees. In a baking dish, place the onions on the bottom of the dish and pour in the pineapple juice. Prep your chicken, assure the inside is cleaned out. Rub Weekend BBQ by Outside Table all over the chicken, inside and out. You may need closer to 3 tbsp if you have a larger bird. Place the chicken breast side up on the onion. Bake for 45mins-1.5hrs, depending on the size of your chicken. Internal temperature should read 165 degrees. Pull and allow to sit for at least 10 minutes.
- Debone the chicken and place the meat in a large bowl. Toss with Sunday Sauce by Outside Table.
- To assemble, toast your buns in a little olive oil until golden brown. Add your chicken and coleslaw to the bun. Enjoy!
