Our good friend over at @wifestyle_cooking wowed us with this amazing meatball recipe featuring none other that our own Sunday Sauce! This recipe makes 16 meatballs, and we're betting your family will request more.
1 lb ground chicken
1/4 onion, grated or minced
1 garlic clove, minced
1/2 cup gluten free bread crumbs (or use gluten full crumbs if you prefer)
1/4 cup grated parmesan cheese
2 oz non-fat Greek yogurt
1 tbsp kosher salt
1 tsp black pepper
Mix all of the meatball ingredients and seasonings together except for the Sunday Sauce
Roll the meat mixture into meatballs with your hands (about 1 1/2 tbsp of meat for each). Place on non-stick baking sheet. Be sure to leave room between the meatballs.
Bake in a 415 degree oven for 20 minutes.
Remove from oven, toss the meatballs in a large bowl with the Sunday Sauce
to coat, place back on the baking sheet, and broil for 3 minutes until caramelized.
